If you are based in the UK, or just visiting, I would really recommend the Coast-to-Coast walk. You get the satisfaction of fully crossing a country (admittedly a smallish one!), touching the sea at both ends and a great cross-section of British scenery. Not to mention some great pubs and lovely ales!
